OPENING ANECDOTE

Chef Victor Bongo here, and I'm over the moon to dish out a recipe that'll dance a jig on your taste buds! When I first moved to Canada from the Congo, I was convinced I saw a T-Rex on a farm – turns out, it was just a turkey with attitude! But that first Christmas, I took a bite and was smitten! I knew I had to whip up something that would spread joy like I felt, something simple, good for you, and bursting with flavor.

VoilĂ ! The Turkey Tango Sliders were born, decked out with Caramelized Onions that sing, Cranberry Aioli that flirts, and Truffle Gouda Cheese that steals the show! They're like a party in your mouth, and I'm chomping at the bit for you to dive in!

DIRECTIONS

1. Turkey Slider Instructions:

Mixing: In a large bowl, combine:

i. 1 lb ground turkey, 1 large egg, beaten, 1 medium white onion, finely diced, 1 Tablespoon Worcestershire sauce, 1 teaspoon fresh chopped thyme, 1 teaspoon garlic puree, œ teaspoon onion powder, and salt and pepper to taste until everything is well mixed.

Shaping: Use a small ice cream scoop or measure to form the mixture into 2oz round mini patties. Place them in the fridge until you're ready to cook.

2. Cranberry Aioli Instructions:

Whisking: In a separate bowl, whisk together:

i. œ cup cranberry sauce, œ cup mayonnaise, 1 teaspoon Dijon mustard, œ teaspoon garlic puree, and salt and pepper to taste until smooth.

Chilling: Refrigerate the aioli until you're ready to assemble your sliders.

3. Onion Instructions:

Slicing: Slice 1 lb white onions in half from root to stem, remove the outer skin, and cut into thin (about ⅛") slices with the grain.

Cooking: Heat 1 Tablespoon butter or olive oil in a large skillet over medium heat. Once hot, add the onions, œ teaspoon table salt, and 1 teaspoon brown sugar.

Caramelizing: Stir occasionally until the onions start to shrink and reduce. Once softened, lower the heat to medium-low and continue cooking until they are deep golden brown and caramelized, stirring as needed.

Deglazing: If the onions stick or start to burn, add a splash of water or chicken broth to deglaze the pan.

4. Assembly and Cooking:

Cooking Patties: Cook the turkey patties in the skillet or on a grill over medium heat until they are cooked through, about 4-5 minutes per side.

Toasting Buns: While the patties cook, lightly toast your slider buns for a bit of crunch.

Assembling: Spread a layer of cranberry aioli on the bottom half of each bun, place a cooked turkey patty on top, add a generous amount of caramelized onions, and finish with a slice of truffle Gouda cheese.

Serving: Serve immediately, letting the warmth of the patty slightly melt the cheese. Enjoy your Turkey Tango Sliders with a festive flair!

Remember, this recipe is all about bringing joy and flavor to your table, so feel free to get creative with your presentation or add any additional toppings that tickle your fancy!
